The Dalton Winery, near Kerem Ben Zimra,
is set in the beautiful green, mountainous country of the
Upper Galilee, five kilometers from the Lebanese border,
overlooking Mount Hermon.
Established in 1995, Dalton is one of the
few family owned wineries in Israel. The Haruni family moved
from London to Israel with the vision of developing industry
in the long neglected area of the Upper Galilee.
Dalton started with humble beginnings in
a back yard in Moshav Kerem Ben Zimra, producing 20,000
bottles of white wine. Today Dalton produces close to
600,000 bottles, of premium and super-premium reds and
whites, in its state-of-the-art facility. Dalton exports
extensively throughout the world.
About the region
Dalton Winery and its vineyards are located in an exclusive
area of the Upper Galilee (Merom Hagalil). The vineyards of
Kerem Ben Zimra reach an altitude of between 800 - 900
metres above sea level. This volcanic plateau combining high
altitude, optimum soil conditions and a unique climate
provide the ideal conditions for growing grapes in Israel.
The cold winters provide an essential dormant period for the
vines, while hot summer days with cool summer nights enable
the grapes to mature at a steady rate, factors which allow
us to grow excellent grapes for excellent wines.
Dalton is the only winery situated in
this area, and can boast that it is one of the only wineries
in Israel located minutes from all its vineyards. The
proximity to the vineyards allows the winemaker to
constantly monitor the vines throughout the year and, closer
to vintage, decide the optimal time for harvest, it also
ensures that the grapes arrive in the winery immediately
after harvesting and do not have to suffer the indignity of
traveling many hours in the midday sun, before they are
processed.
Since the establishment of the Dalton,
the Upper Galilee area has been transformed into a
successful mainstream tourist destination. Surrounded by
beauty and history, the Dalton Winery is close to a wide
variety of attractions, many of great religious and
historical significance. The area is distinctively
picturesque, offering views of the surrounding vineyards,
the Hula Valley and the snow-capped Hermon Mountain.

WHITE
An easy drinking semi-dry wine
abundant in fruity and floral aromas combined with crisp
citrus and tropical fruit character, and well balanced
acidity.
SERVING: A good
accompaniment to fish, seafood dishes, chicken or pasta
dishes with cream based sauces.

CANAAN
RED
This Cabernet Sauvignon, Merlot and
Shiraz blend is an easy drinking red wine with spicy
forest fruit flavours, low tannins and a hint of
vanilla. This is a wine with very few pretensions.
SERVING: Particularly suitable for
Mediterranean cuisine, and a good accompaniment to
pasta, pizza, poultry, moussaka and mixed grills.

SAFSUFA VINEYARDS
Safsufa wines are premium wines blended by our
winemakers to bring out the best characteristic of the
fruit. They are also mevushal.
Named after one of our vineyards where all the three
varieties grow, the Safsufa series currently contains
three wines: A barrel aged Cabernet Sauvignon, a crisp
fruity Sauvignon Blanc and a very limited production
(100 cases) of barrel aged Shiraz.
Cabernet Sauvignon was barrel aged for neatly a year in
a mix of French and American barrels it is a dark, rich
and well-balanced wine, showing characteristic Cabernet
Sauvignon forest fruit qualities such as currants,
berries and mint, which are complemented very well with
subtle vanilla flavors of the barrels.
Shiraz, a new wine to the Dalton portfolio, was barrel
aged entirely in new American barrels for around 12
months. It is dark almost black in colour with an
intense nose of black fruit, plums, berries and
liquorice. The wine has soft integrated tannins and a
long finish.
Sauvignon Blanc was lightly barrel aged up to two
months, before bottling, it is a crisp and refreshing
wine with tones of tropical and citrus fruit.

SAUVIGNON
BLANC / CHARDONNAY BLEND
Sauvignon Blanc and Chardonnay grapes
were selectively hand picked to create this classic
sauvignon blanc style wine most suited to the Mediterranean
climate. The wine is light with a crisp acidity combining
the fruity aromas of citrus and guava together with a grassy
sauvignon character.
SERVING: This wine is great
with a whole host of dishes, including grilled or baked fish
e.g. tuna and snapper or a Sushi meal. It is equally at home
with roast chicken and even Chinese food.

MERLOT
The wine is viscous and dark purple, it
is showing classic varietal qualities of plums, cherries,
cloves and homemade jam, balanced by subtle shades of

FUMÉ
BLANC
Sauvignon Blanc Fumé: This is a classic
Mediterranean style wine, light and crisp, with a fruity

character.

snapper or red mullet, equally at home with roast chicken
and even Chinese food.

    SHIRAZ
Dark, almost black in colour, the nose is
intense with black fruit, plums, berries, liquorices, and
pepper tones, with soft integrated tannins and a long
finish. A very concentrated wine with a long aging
potential.
SERVING: An elegant fruity
wine which emphasizes the fruit over the barrel, undertones
of melons pears and honey integrate harmoniously with the
more savory and toasty notes of the oak.

FUMÉ
BLANC
Barbera is a deep purple colour, the nose
is intense with raspberries, rose petals and sweet
confectionary. The wine is medium bodied with a refreshing
acidity and has soft and velvety finish.
SERVING: Barbera is one of the
most food friendly wines. Low tannins in the wine will not
overpower food. The acidity in this wine complements many
foods. Any meal with a tomato sauce is a perfect match with
Barbera.

CABERNET
SAUVIGNON RESERVE
Impressive Cabernet characteristics and
full of forest fruit and vanilla characters. The depth of
colour and complex aromas give an excellent indication of
what this wine currently has to offer, and how it will
develop in the bottle. Long on the palate and is smooth and
deeply satisfying.
* A premium wine to be enjoyed at leisure.
SERVING: This wine is
particularly suitable for heavier meals, for example roast
beef, leg of lamb or lamb chops. For the vegetarians out
there we could recommend you drink this wine with a heavy
winter stew with lots of aubergines and tomatoes,
alternatively you could drink the wine alone and just enjoy
a truly excellent wine.

    CHARDONNAY

The delicate manner in which this wine
was made have given this wine a harmonious balance of fruit
such as apples apricots and melons, together with a mild
buttery vanilla toasty character received during its period
in barrels.
SERVING: A great wine and an
ideal accompaniment to smoked meats or fish, grilled chicken
or fish, or alone as an aperitif before dinner.

BLANC RESERVE
This is a crisp fruity wine with a medium
body and long palate. It is a wine that is characterized by
tropical fruit characters of grapefruit and pineapples.
SERVING: A good accompaniment
to baked fish dishes, grilled tuna, veal and grilled
chicken.
